When water is heated up the H2O molecules gain kinetic energy hence speeding up. If it is heated to 100 degrees celcius and still more heat is given this heat energy is given to the paticles as potential energy and the particles do not speed up, the substance does not become hotter, but the particles become further away - forming a gasseos water
